Mushroom "Soy" Sauce

Adapted from Saveur.


Ingredients

  1. White button mushrooms, 907g
  2. Salt, 1tbsp

Instructions

  1. Slice mushrooms.
  2. In a bowl, toss mushrooms with salt.
  3. Transfer mushrooms to a colander lined with a cheesecloth, and set it over a bowl.
  4. Squeeze mushrooms dry and reserve liquid.
  5. Store the sauce in the refrigerator for up to 2wks.
