Pumpkin Kaya

Ingredients

  1. Pumpkin, 300g
  2. Coconut milk, 200g
  3. Caster sugar, 100g

Instructions

  1. Remove the skin of the pumpkin, and chop into chunks.
  2. Steam pumpkin for 10min.
  3. In a blender, puree pumpkin.
  4. In a pan on low heat, combine pumpkin puree, coconut milk and sugar.
  5. Stir constantly for 45min until a thick consistency.
