Cabbage Chips

Adapted from Octaphilosophy by André Chiang.


Ingredients

  1. Cabbage leaves, 20
  2. Water, 50ml
  3. Sugar, 50g

Instructions

  1. Blanch cabbage leaves.
  2. In a pan, add water and sugar. Bring to a boil on high heat.
  3. When the sugar dissolves, remove from heat.
  4. Brush both sides of cabbage leaves with sugar syrup.
  5. Bake the leaves between 2 flat trays at 120C for 45 min until crisp.
