E-Z Bake Individual Angel Food Cakes
From Try This At Home by Richard Blais. Serves 8.
Ingredients
- Unsalted butter, for greasing
- 3 eggs
- 5 tbsp sugar
- 1/2 cup pastry flour
Instructions
- Lightly grease the insides of cupcake liners.
- In the bowl of a standing mixer fitted with the whisk attachment, whip the eggs on medium-high speed and add the sugar in a slow, steady stream.
- Continue whipping for about 6-8 min, until the eggs have tripled in volume.
- Remove the bowl from the mixer stand, and using a fine-mesh strainer, sift the flour onto the top of the eggs.
- Using a rubber spatula, gently fold in the flour until just incorporated.
- Fill each cupcake liner 2/3-full of batter.
- Place in the microwave and cook on high for 30s, or until the cakes are set.
- Cool the cakes for 5 min before serving.
