Dry Ice Cream

From Try This At Home by Richard Blais. Ice cream frozen using dry ice tastes carbonated.

Ingredients

  1. Ice cream base
  2. Dry ice

Instructions

  1. Wearing protective gloves, add several large chunks of dry ice to a food processor and pulse until pulverised to a powder.
  2. Put the ice cream base into the bowl of a standing mixer fitted with the whisk attachment and turn it onto medium speed.
  3. Drop spoonfuls of the dry ice powder into the mixer until the ice cream is very thick and frozen like soft-serve ice cream.
  4. Use immediately, or transfer to an airtight container and freeze until ready to use.
