Dry Ice Cream
From Try This At Home by Richard Blais. Ice cream frozen using dry ice tastes carbonated.
Ingredients
- Ice cream base
- Dry ice
Instructions
- Wearing protective gloves, add several large chunks of dry ice to a food processor and pulse until pulverised to a powder.
- Put the ice cream base into the bowl of a standing mixer fitted with the whisk attachment and turn it onto medium speed.
- Drop spoonfuls of the dry ice powder into the mixer until the ice cream is very thick and frozen like soft-serve ice cream.
- Use immediately, or transfer to an airtight container and freeze until ready to use.
