Mustard Caviar

From Try This At Home by Richard Blais. 

Ingredients

  1. 2 tbsp yellow mustard seeds
  2. 1/4 cup sugar
  3. 1/4 cup water

Instructions

  1. In a pan, toast 2 mustard seeds over medium-low heat for about 3-4 min, swirling the pan occasionally, until fragrant and just beginning to pop.
  2. In a small bowl, stir the sugar and water together. 
  3. Pour the mixture into the pan, stir well, and cook for about 2-3 min, until the mustard seeds are swollen, the sugar dissolves and the liquid is reduced and syrupy.
  4. Remove from heat and let cool to room temp. 
  5. Store in an airtight container in the refrigerator for up to 6 wks.
