Toast Soup

Adapted from Food52.


Ingredients

  1. Chicken stock, 473ml
  2. Sourdough bread, 3 slices
  3. Hot milk, 237ml
  4. Dijon mustard, 1 tbsp
  5. Vinegar, 1 tbsp
  6. Salt, to taste
  7. Black pepper, to taste
  8. Butter, 43g

Instructions

  1. Toast bread until slightly burnt.
  2. In a pan, bring stock to a boil.
  3. Break toasted bread into pieces and add to stock.
  4. Remove stock from heat and leave for 10 min.
  5. Add milk, mustard, vinegar, salt and pepper to soup.
  6. Blend until smooth.
  7. Return soup to pan and heat gently.
  8. Whisk in butter and serve hot immediately.

Simple Korean Seaweed Soup (Miyeokguk)

Adapted from Crazy Korean Cooking. Commonly served with rice. Can use mussel/anchovy/beef stock too.


Ingredients

  1. Dried wakame, 28g
  2. Water, 2000ml
  3. Soy sauce, 1 tbsp
  4. Minced garlic, 1 tsp
  5. Sesame oil, 2 tsp

Instructions

  1. Soak wakame in water for 1h.
  2. Rinse twice and drain.
  3. Cut wakame into bite-sized pieces.
  4. In a large pot, add sesame oil and sauté wakame for 5min.
  5. Add water, garlic and soy sauce.
  6. Boil uncovered on high heat for 30min.
  7. Skim off any foam or oil from the top.
  8. Serve hot.

French Onion Grilled Cheese Sandwich

Ingredients


Onion Soup Paste

  1. Butter, unsalted, 50g
  2. Onions, sliced, 4
  3. Flour, 10g
  4. Beef stock, 1l
  5. Salt, to taste
  6. Pepper, to taste

Grilled Cheese Sandwich
  1. Bread/baguettes
  2. Cheese

Instructions


Onion Soup Paste
  1. In a pan, heat butter at medium-high heat.
  2. Add onions and sauté for 5 min until tender.
  3. Stir in salt, pepper and flour.
  4. Reduce to medium heat and sauté for 5 min until the onion is golden brown.
  5. Stir in beef stock and cook for 1 min.
  6. Bring the mixture to a boil.
  7. Cover, reduce to low heat and simmer for 2h.

Grilled Cheese Sandwich
  1. Brush the onion soup paste onto the bread generously.
  2. Layer cheese on top of bread.
  3. Toast the bread until crisp and golden, and the cheese has melted.

Baguette Soup

Ingredients

  1. Baguettes, 5
  2. Milk, 300ml
  3. Cream, 100m
  4. Salt, to taste

Instructions

  1. Bake bread at 180C for 15 min until dry.
  2. Break up the bread roughly.
  3. In a pan, add milk, cream, salt and bread. 
  4. Simmer the mixture until the bread is soft.
  5. Blend until smooth.
