Semolina Cake

Ingredients

Cake
  1. Butter, 110g
  2. Greek yogurt, 280ml
  3. Sugar, 200g
  4. Semolina flour, 260g
  5. Baking powder, 1 tsp

Syrup
  1. Sugar, 230g
  2. Lemon juice, 2 tsp
  3. Water, 160ml

Instructions

Cake
  1. Preheat oven to 160C.
  2. In a bowl, mix butter, yogurt and sugar.
  3. In a separate bowl, mix semolina and baking powder. Add to the butter mixture.
  4. Mix thoroughly.
  5. Fill a cake tin greased with butter. 
  6. Bake for 25 min.

Syrup
  1. Add all ingredients to a saucepan.
  2. On medium heat, stir until sugar dissolves.
  3. Bring mixture to a boil and let simmer for 10-15 min. 
  4. Remove from heat and let cool.
  5. When the cake is baked, remove from oven and spoon syrup over the cake.
  6. Let the cake cool, then cut into slices and serve.
