Burnt Butter Chips

Adapted from Octaphilosophy by André Chiang.


Ingredients

  1. Spring roll wrappers, 6
  2. Burnt butter, 20g
  3. Maple syrup, 20g
  4. Ground Szechuan pepper, to taste

Instructions

  1. Cut each spring roll wrapper into strips to obtain 20 strips.
  2. Brush each side of the spring roll wrapper with burnt butter and maple syrup. 
  3. Sprinkle a little pepper on 1 side of the strip, and press together with another strip. Repeat with all strips.
  4. Place the strips on a baking sheet lined with parchment paper, and press another baking sheet on top.
  5. Bake at 160C for 15 min.
