Caramelised Sweet Potatoes (Ba Si Di Gua)

Ingredients
- Sweet potatoes
- Oil
- 1/2 cup white sugar
- 1/2 cup water
Instructions
- Peel the sweet potatoes and cut into chunks.
- Steam the sweet potatoes on medium heat until a toothpick inserted through the center comes goes through easily. Ensure that the sweet potatoes do not become too mushy.
- In a wok/pan, heat the oil over high heat. The oil is considered hot enough when a wooden chopstick in inserted into the oil and bubbles emit.
- Fry the sweet potatoes in the oil on medium heat until crisp and golden. Remove the sweet potatoes and place them on a kitchen towel to drain any excess oil.
- In a saucepan, heat sugar and water over medium heat until the sugar dissolves and the liquid is reduced to a syrup.
- Add the sweet potatoes to the saucepan, and toss quickly to coat with the syrup.
- Remove and serve immediately.
